Thịt bò rửa sạch, thái miếng vừa ăn. Đặt nồi nước lên bếp đun sôi, cho thịt bò vào chần sơ qua. Vớt ra để ráo nước. Hành boa rô rửa sạch, thái khúc vừa ăn. Hành lá rửa sạch, thái nhỏ. Táo gọt vỏ, thái miếng vừa ăn. Gừng rửa sạch, gọt vỏ, thái lát mỏng.
Đun nóng dầu ăn, cho hành boa rô và thịt bò vào xào. Nêm gia vị gồm: rượu, nước tương, hoa hồi, quế, gừng và lá nguyệt quế vào đảo. Thêm lượng nước vừa đủ vào nồi, đậy vung lại, đun nhỏ lửa khoảng 60 phút cho nước cạn dần. Cho táo vào nấu tiếp khoảng 5 phút. Tắt bếp.
